Muddle thyme, simple syrup and bitters in a shaker glass. Add egg white, lemon juice and Boundary Street Maple. Dry shake it (without ice). Like Outkast Polaroid picture kind of shake. Once it's nice and frothy, add a few cubes of ice and shake again until cold (about 5-10 seconds). Strain over fresh ice into two rocks glasses. Garnish with a thyme sprig and enjoy!
P.S. Feel free to strain this cocktail into a highball glass and drink both servings.
